Sous Chef for Mediterranean Fine Dining Restaurant

About the role

The Levant Restaurant, part of The Condado Collection, offers a Mediterranean‑inspired fine‑dining experience. We are seeking a proactive Sous Chef to support the Executive Chef in delivering high‑quality dishes, managing the culinary team, and maintaining operational excellence.

Key responsibilities

• Assist the Executive Chef with hiring, training, scheduling and coaching staff.
• Oversee daily kitchen operations to ensure quality preparation, presentation and consistency of all menu items.
• Manage food purchasing, inventory control and cost compliance while developing menus within approved food and labor budgets.
• Create and maintain standardized recipes and recipe cards, and train the team on their use.
• Ensure proper food storage, freshness, stock rotation and adherence to safety and sanitation standards.
• Maintain kitchen cleanliness, organization and set‑up for each service period.

Required profile

• Minimum six years experience as a Sous Chef in a high‑volume, multi‑outlet hotel, restaurant or fine‑dining environment.
• Proven management experience with financial knowledge and ability to control food and labor costs.
• Fully bilingual in Spanish and English.
• Physical ability to stand for long periods, lift up to 50 lb and work flexible shifts including evenings, weekends and holidays.
